Sanji & Nefertari Vivi

Nefertari Vivi Along with Nami (and later Robin), Sanji treats Vivi with extra care while she's aboard the Going Merry. She gets the best quality food available to them and she gets it before any of the male members are served. This is typical treatment on the Going Merry, but it doesn't mean that Sanji's caring for Vivi out of pure habit. He, like all of the other crew members, have been sincerely touched by Vivi and the extreme lengths she would go to in order to save her loved ones and her country.

I think Vivi is the first woman that Sanji comes across who is an independent. Until he meets her, he believes that all girls shouldn't have to be forced to get their hands dirty and tries his best to do everything for them. While Nami is an independent woman as well, she prefers to use Sanji's chivalry to her advantage where Vivi would reject it without hesitation and prefer to do whatever it is that needs to be done on her own. This doesn't stop Sanji from doing everything he can do to help Vivi's interests though; he puts his life on the line many times so that Vivi is able to continue on and save her country from peril.

When the Going Merry arrives at Drum Island and Vivi is shot when she tries to stop Sanji from attacking the guards, he's horrified and speechless. I can't even imagine what must have gone on in his head at the moment; not only was his beloved Nami on her deathbed but Vivi, another precious person to him, was injured because of his actions. I think from this point on, Sanji becomes more responsible, as seen when he appears as Mr. Prince at the Raindiners Casino. He proves to Vivi that he's someone that she can rely on in the most hopeless of times.

As for Vivi... She views Sanji as a reliable friend who, if she didn't have, she might have not been able to stop Baroque Works and the war on her country. Like the other Straw Hat Pirates, to Vivi, Sanji is an irreplaceable friend who will hold a very special spot in her heart.
